Preserving The Ancient Art of Handmade Soy Sauce
Mu, Artisan Soy Sauce stands out by preserving the traditional, ancient method of soy sauce production requiring intensive, manual labour.
- Soy beans are steamed
- Mixed with flour to sit and develop the fermentation mold
- Salt and water are added to let it naturally ferment under the sun in clay urns for up to 9 months
The result is 80-100 bottles of 100% first draw soy sauce from each clay urn.
Traceability and Transparency
As MU remains a small batch production, each brewing urn carries its own specific number according to its fermentation schedule. Each bottle of MU soy sauce includes a tag with the urn number and the bottle number, allowing the customers to be more acquainted with the product.
